Product Summary

Price: $6.10 CDN

The carbon dioxide bubbles of sparkling wines are produced by a secondary fermentation of wine in which yeast and sugar are added to a base wine (cuvee). The fermentation is generally complete after about six weeks, but the wine is then held on the yeast lees (the precipitated or spent yeast) for a minimum of one year and sometimes up to ten years. During this time the lees are broken down, producing the unique flavour of lees-aged sparkling wines.

The Sparkling Wine Aroma Wheel can be used to describe the aroma of sparkling and Champagne wines. Terms, presented on the wheel in three tiers, range from the most general in the center to the most specific in the outer circle.

The benefits of describing wines in specific terms such as these are your greater enjoyment and appreciation of the wonderful world of sparkling wines,  plus an enhanced ability to discriminate and remember wine aromas.
